Mysterious resident in a gray robe (Minecraft)

Noticed it a long time ago, but remembered it today. I sat thinking what kind of resident? What's his profession? Than traded? Was it even in the game?
Rummaged in Google, YouTube and forum. But alas found nothing, except one video of the student and another person who was also interested in ''grey'' resident. Him and no one answered.
I hope you can help reveal his secret?

Is a resident in a green robe. His profession is cook poor. He sells nothing, the game appears infrequently.

Art and makes the game different people, though. The artist are likely to see.
