We have been organizing amateur rally sprints for a long time, but we do the simultaneous departure of several cars in exceptional cases. Snowdrifts are good, but a bumper is a consumable :-)

Of course, this is much more spectacular than the usual single time trials, but I personally would never put 2 cars on the track at the same time. Although I would go myself if the enemy is guaranteed to be safe - it hurts adrenaline.
