Voice files are linked to dialogs.
You look at the name of the replica, in your case it is the Bartender, and then you look for a sound file with the same name in the sound folder and change it to a dummy - a sound file without sound. In the stalker, in the sounds folder, such a sound was specially made by the developers themselves, called $ no_sound. And here you change the sound that you need.
