Humanity (Dark Souls)

I can't deal with humanity. It seems like the level is displayed at the top left, but when you die, you still become hollow and spend one more humanity. And why then raise the level on the counter, only for farming?

The defense is slightly increased, and there is also a weapon that has a bonus (additional damage) from active humanity (the furious Queeleg sword, or any weapon of chaos).
