I understand the game is not tied to the class of the character. Having played enough of a magician, I can reset everything and make a warrior with a two-handed weapon out of this magician. And it wouldn't make any difference if I started as a warrior from the very beginning. Is that how it works?

Yes, but it's easier to make a faith-oriented character out of a cleric than out of a knight. You can redistribute, but not immediately, and why bother?
