Ending Help (Elden Ring)

Hello, I'm going through elden ring, I've reached Rennie's tower. If I take her quest chain, will I lose some of the story bosses and so on? And the second question, is it possible to complete the quest of Rennie and Sellena at the same time? Thanks in advance!

Everything can be done, the ending is chosen at the very end of the game, after defeating the final boss.
Passing chains of quarters from NPCs will only unlock all the endings for you, because if you just go through the main story, then the choice of endings will be small.
