in the ETS2 folder, which is in my documents, there are backups of all profiles. restore what you need.

In the Euro Truck Simulator 2 folder, next to the profiles folder, there are folders such as profiles(1.17.1s).bak open this folder and copy all the contents to the profiles folder and everything will return your profile.
