Copy hidden partitions.

Going to reinstall the OS on the laptop. At the moment is Win 8.1, I want to put Win7. For secure (if I need to go back to 8.1) you need to copy hidden partitions - recovery, restore to another hard disk. How to do it without cloning the entire disk?
Just a question - if when you reinstall Windows is to use the quick format hidden partitions will remain or be erased?
