So, take any roguelike 80-90'ies and you will be more replayability than any above game. As always, it would be nice to clarify the scope of the top, and then again falling into the your three favourite games.
Well, OK, let it be the last, I have played different and, in my opinion, the subject:

1. Crusader Kings II
2. The Age Of Decadence
3. Dungeon Crawl Stone Soup

2. X3 Terran Conflict (for some Reunion)
3. Kotor 1-2 (strange that nobody mentioned)
4. Gothic 1-2 (at the time, jammed into holes)
5. Fallout 2, Fallout New Vegas (prirovnyat really) :)
6. Dragon Age Origins
7. Mass Effect Trilogy
8. TES 3.4.5. (controversial of course, since games are very long)
9. Any game from the Pirates
10. Neverwinter Nights 2 (my personal opinion, 10 times pereprohodil)

1)Diablo. Any, well, let it be D2.
2) X3, again, any, same sandbox.
3)BG2. Sometimes, when the sky hangs the full moon, the mouse cursor crawls to the label...nothing better since BioWare never did, by the way. All of her party games since then were built on once hire scheme, the same characters, the same is essentially the story, its basis, changing only the setting and all sorts of things like role-playing system.
