Since then no one has yet posted a solution, then lay out what I know. There are two fashion: True Concealment and Disable Timers and set the timers manually. Use one of these solutions for the Long War 2 on your own:
True Concealment for LW2. It makes the timer inactive until then, until the party is in disguise. So it is necessary to use tactical ingenuity to manage to get to mission objectives by stealth, and only then start firing. May all the enemies on the map to clean up and no time anyway, but to fulfill the purpose and get out, really.
Disable Timers. At the moment Long War 2 v1.1 not working with him. Users Steamcommunity asked to upgrade it to a Long War. While that is not updated. Stay tuned to Steamcommunity. If it will update to Long War 2 - so you will have to start a new game with Long War 2 + Disable Timers or to start a new game with Long War 2 separately. Also mod Disable Timers can not run stably with the previous save - if you start without them - it is better to make a backup of the savegame, and then install it - same thing with Long War 2 - it is better to start a new game. If at least once you start your save with the mod Disable Timers - it cannot be disabled (only starting the game again)
The third option - you can change the timers manually (translated myself from English):
In the folder \XCOM 2\XComGame\Config\ is the XComLW_Overhaul - open it with any editor and change the following values:
Line 1027 to 1034 - determine counter moves for each mission
Line 1037: 1040 - modifiers which add a special number of moves on a mission, depending on complexity.
For example, the amount of turns for the missions, hacking\hacking - usually the default is 8 as indicated in string 1029 (leave it as it is). Now change another parameter - the timer in the missions depending on difficulty TimerDifficultyMod value for Rookie at line 1037 to the value 70 (and the default is 4), then the total number of moves for missions hacking\hacking for complexity Rookie (beginner or easy - as it says can not remember) will result in 78 moves. It turns out the formula is: number of moves in specific missions (string 1027-1034) add (+) to the number of moves depending on the difficulty (TimerDifficultyMod, lines 1037-1040) = total number of moves for a particular mission. Thus it is possible manually without mod Disable Timers, set timers for themselves (the values cannot be overstated as you wish)

In short, look for a file XComLW_Overhaul.ini in the folder Mods\LW_Overhaul and the example of another user changing the following in this file (open it with any text editor): search for all rows with the same name variable: +InitialTurnCounts=
