Witcher 3 like in the demo (The Witcher 3: Wild Hunt)

Is it possible to make jumps of Geralt the same as in this video?
The same question about the map/minimap and health level of the enemies. Maybe the old textures are stored in the game files, or you can pull out of the game map image, points, enemies, icons, leaves, etc. and edit them?
Sometimes reviewing a demo, and I regret that the game has changed, cut mission with Destroy and a Griffin. Can't say for the worse, but still.
