New Game +, only with a standard level cap? (The Witcher 3: Wild Hunt)

Hello, I've recently started to replay the witcher 3 times. This time I decided to try out the "new game +", I really didn't like the level cap. The numbers frankly scare me, for example, level 50 ghouls in the white garden. I would very much like to drive manticores in my armor against standard opponents. Nobody tried? Thank.
