Damage on NG + (Dark Souls 3)

It seems to me about NG + 5, even with a pumped-over strength and agility of 99, the damage will still not be enough. In Bloodborne, for example, I could go into a dungeon and fight off gems there for + 27% damage and such 3 pieces are inserted into the weapon. Isn't there anything like that in Dark Souls 3?

here you will need to use magic
defense in depth + sacred vow + inner strength + weapon hardening + certain rings, etc.
